Ingredients:
2 pounds bottom round, sliced thinly
1 bottle of Corona beer
3 Serrano peppers, thinly sliced
1 cup lemon juice
1/2 cup light soy sauce
1 tsp cracked pepper
*a dash of Worcestershire sauce
*1-2 teaspoons cayenne
Mix all ingredients except the cayenne pepper. It’s best to marinate in the fridge overnight, but if you are pressed for time, try to marinate at least 4-6 hours.
After marination, remove the meat and lay it out on a rack. Sprinkle/season the meat with cayenne pepper. The meat goes into an oven at 200-degrees Fahrenheit and dehydrates in there for 3-4 hours, depending on the thickness of your meat.
*This is my second batch of homemade jerky, it never failed. I just tweaked it a little bit to give more punch of flavor. You can taste the hint of beer, lemon and most definitely the spiciness. The next batch I’m planning to make for game day. I’m thinking for another flavor profile…how does pineapple and habañero sound like or taste like?! enJOY!!!

Awesome recipe. I’m not the jerky type, but this looks like something I can get behind. I’ll have to make this for my brother as birthday gift and get him off the Slim Jims (he needs to look svelte for his summer nuptials!)
Thank you! To tell you the truth it doesn’t taste like the store bought jerky. It is the really thing, the best part is you know what you put on it. I’m sure your brother would love it
Nice recipe! This looks so good…I’m now checking and following your blog so keep em coming. Cheers.
I’m glad that you like it
